BUT…while this book was never intended to get all geeky and scientific in the health and fat-loss department, and even though my recipes don’t contain any, I do feel the need to talk for a minute or two about the big, bad ice cream monster: sugar. com – on my blog. I’ve noticed that when most recipes say they are sugar-free, what they really mean is they don’t have ordinary refined white sugar in them. Typically, the white sugar is replaced by honey, agave, coconut sugar, maple syrup, brown sugar, or increasingly, dried fruits such as dates.

If you shake it and there is ANY noise, it is not ready to use. Overnight is typically sufficient to freeze the bowl. Your ice cream custard needs to be *really* cold before you churn it. To be really cold it needs to be refrigerated for at least 8 hours, and preferably overnight. DO NOT TRY AND CHURN THE ICE CREAM CUSTARD IF IT IS NOT COLD. All that will happen is that it will churn for so long that the freezer bowl starts to defrost and then all you are doing is incorporating air into custard that is not getting frozen.
